After this Halloween weekend, many people will have a ton of pumpkin seeds left over and will be looking for ideas on what to do with them. Just one ounce contains 10% of your daily recommended intake of iron, 30% of your magnesium and 25% of your zinc intake. Also, pumpkin seeds contain healthy monounsaturated fats which are great for your skin, hair and heart . Here are three ways to use your leftover pumpkin seeds:
1. Whole-Wheat Bread with Walnuts, Sesame, and Pumpkin Seeds. Who doesn’t love fresh homemade bread, especially when it’s actually good for you? This easy to make bread is full of fibre and protein but tastes delicious. Get fiber and protein with a slice of this hearty bread. Low-fat yogurt and honey provide unrefined sweetness, while pumpkin and sesame seeds offer a grainy texture. Serve this hot out of the oven with a little bit of apple jam or orange marmalade.
2. Spinach Salad with Cranberries and Pumpkin Seeds. A salad can be tasty if the right ingredients are added. By using a combination of spinach, vegetables of your choice, cranberries and pumpkin seeds you will get a flavorful and highly nutritious salad. This salad contains a high amount of fibre, iron, calcium and a multitude of vitamins and minerals . By topping it with a homemade vinaigrette you will have a low calorie but filling meal and get rid of some of those extra pumpkin seeds.
3. Pumpkin Soup With Candied Pumpkin Seeds Sweet Vidalia onion and butternut squash. This soup is the perfect comfort food that is easy to make. You can use any recipe you want for the base of this soup, or even use a boxed soup if you want to save time. The candied pumpkin seeds on top are what really make the recipe and all you have to do is bake the pumpkin seeds with sugar and honey. The sugar on the pumpkin seeds blends with the savory flavor and complements the naturally sweet soup. This soup is full of vitamin A to keep your eyes healthy.
