Ayurvedic cooking is an aspect of nutrition that involves both art, science, belief, and nutrition. The basic principles behind this type of cooking are the five Elements, the three Doshas, the three Gunas, the seven Dathus, and the six Tastes. Ayurvedic cooking focuses on the method in which the foods are prepared, the quality of the food, the mood of the cook, and the effects that the food have on the body and the consciousness.

Ayurvedic nutrition is both a science and an art. The goal is to use certain foods and pair them together in a way that will balance the body and maintain good health. The proper use of fresh foods are said to help digestions, promote healthy tissues in the body, and provide a clear mind. Ayurvedic cooking is aimed at being a conscious and healthy way of cooking that will leave the eater satisfied but will also give the body optimal nutrition and therefore prevent diseases and ailments. Unlike most other forms of cooking, Ayurvedic cooking is individual to the eater. We are all individual and unique and therefore what we eat and how it is prepared should also be unique. This type of cooking uses mainly vegetables, spices, whole grains, and fruits because they are energy boosting foods that will cleanse the body. When a diet is based solely on these foods there will be no build up of toxins and the eater will have increased energy and a clear mind. Foods with sugar and fat and that are processed are completely avoided as they give the opposite effect. Dark leafy green vegetables area a stable in an ayurvedic diet because they contain certain nutrients and minerals that no other food does and are important for optimal health.

Ayurveda is considered the science of life, prevention and longevity. It is the oldest form of holistic nutrition and can be dated back to over 5,000 years ago in India. It is unique because the focus is not only on the body, but the mind as well. Today, there are many restaurants who focus on Ayurveda cooking and there are also a number of books that are available to teach you how to cook this way by yourself at home.
